Wholegrain Pizza with Hummus

Serves: 2 persons

Ingredients

 

Dough

200ml lukewarm water

6g yeast

1/4 teaspoon Himalayan salt

200ml wholegrain organic flour

1Tbs psyllium husk powder

 

Pizza toppings

200g organic hummus (you can keep it simple and buy it premade)

¾ of one big zucchini

3-4 big mushrooms

10-15 black olives

Salt and pepper

A sprinkle of oregano

Optional: Rocket salad

Try to keep all ingredients organic, as it is better for you and your loved ones!

Directions

  1. Preheat the hot air oven to 220°c.

  2. Mix yeast with water in a bowl. 

  3. Add flour, psyllium husk powder and salt. Leave the bowl on the kitchen counter for 30 minutes.

  4. Chop the mushrooms, olives, and zucchini.

  5. Transfer the dough to your kitchen table and knead it until it doesn't stick to your hands anymore; you can add more flour if needed. 

  6. Flatten it on a piece of baking paper. Now you can add your hummus, zucchini, mushrooms, and olives and sprinkle with salt, paper, and oregano.

  7. Leave your pizza in the oven for about 15-20 minutes, or until it looks crispy and golden. Take out and throw rocket salad on top of the pizza.

  8. Serve with salad or eat on its own. It's perfect for bringing cold for lunch as well.
