Mushroom and spinach tart

EASY MUSHROOM TART

Serves 3-4

 

Prep Time: 30 minutes

Cooking Time: 30-45  minutes

Ingredients:

2oo g of mushrooms

2 handfuls of spinach

4 eggs

½ small tub of full cream (around 180 ml)

2 small shallot onions

1 clove of garlic

Salt 

Pepper

1 tablespoon dried thyme

1-2 tablespoons of olive oil

2 leeks

1 ready-made tart dough

 

Directions:

  1. Preheat the hot air oven to 220°c.

  2. Chop the onions, leeks, and mushrooms.

  3. Fry the onion in olive oil for about 3-4 minutes. Don’t let the onion burn!

  4. Add the mushrooms, leeks, thyme, salt, pepper, and garlic, stirring until the mushrooms' moisture has evaporated. If the mixture is too moist, the tarte will become soggy.

  5. Finally, add spinach and stir for 2-3 minutes, then turn off the heat and put the pan aside.

  6. Mix egg and full cream in a bowl and add a little salt and pepper.

  7. Transfer the tart dough to a tart-shaped mold or a tart tin. Before placing the dough in the tin, add a little olive oil to the base. Then add the mushroom and spinach filling from the pan and cover the filling with the custard mixture of egg and cream.

  8. Cook the tart in the oven for around 30-45 minutes.

Serve as it is or with a nice salad. 

Do a double batch and keep the extra for another easy dinner meal.
